Correct me if I'm wrong, but from what I know, canon is the word to describe whatever is officially accepted that it happened in the story-line. In Dragon Ball's case, no official source has ever said "this & that happened, but not this & that", except for the what-ifs in the video games. He was taught in theoretical disciplines by master roshi when being his student as a kid, and he makes academic references in z, he's not a scholar but i'm positive that his life doesn't revolve intirely around fighting, i'm sure he reads a book every now and then. The movies aren't canon, but Toriyama watched them and said that he thinks of them as being alternate universe, so I guess that makes them canon in a way?

Okay he's ugly but aside from that (and the possibility he can never have kids) he's a terrific guy. Rather than "there is no canon", I think it's more accurate to say that there's no official, agreed upon canon that's been laid out for us. And even if there was, that wouldn't stop fans from making a separate, non-official canon...not that I can think of many good reasons for doing so.

Well, Vegeta and Bulma I can understand. I feel like they've got one of those relationships where their arguments with one another escalate into sex (not all the time, but a good chunk of the time). I feel like they probably do it pretty often.
Goku and Chi-Chi however...it's so difficult to picture that without it being funny, because Goku's just the most non-sexual character who's in a relationship in this series. I feel sad for Chi-Chi, but at the same time...it's so weirdly humorous to picture Goku even trying to be that way.
Maybe if Goku had ever shown being attracted to anyone in the series I'd be able to buy it, but it just feels ooc to me otherwise.

Gohan was born in May, Age 757.
Which means Gohan had to be conceived after August 8th. AUGUST. Three months. In my head canon, Goku did nothing with Chichi during all that time after the wedding. He would simply go to sleep and ignore all of Chi-chi's advances like some strange quirk of hers.
I picture Chi-chi going through many stages... anything from "Teehee-hee, yes! Lets go to 'sleep'... wah? he's sleep...ok
", "This is not funny anymore", "is there something wrong with me?","IMUSTBEHIDEOUS!*bawls*", "ohmygod, what if he's gay", ... and Goku just wondering why the hell she's so upset.

It's not that surprising that he now knows about everything about interactions with women, Goku just didn't know about it first, but Chichi made him discover how to.
I don't think it was akward at all and that she had to work hard for it, Goku is playful and loves what feels good!
Remember that scene when he sleeps on Bulma because he sees an occasion of doing something he knows feels good? That kiddish smile on his face and his "hey, it's been a little while, why not try it again a little, it feels pretty good!" attitude?
Well, that's just how it must go from time to time with Chichi, once he'd tried it once.
I even think Goku is actually the one to ask for it sometimes, and when Chichi does, he must just smile and say "oh yeah, why not?" just as casually as if someone proposed him one of his tasty anime-exclusive "sports drink"!
Goku's general lifestyle, including fighting, eating, sleeping and having sex: "feels good, why not?" with a kiddish smile like that smily:

He's just a dad like any other, who happens to not overthink things, is obsessed with his passion (namely fighting, granted, not all dads share that passion)... and saves the world sometimes (granted, not all dads do that either).
