Actually, I'm not convinced they're dead either. Didn't Whis say angels become inactive when their GoD dies, hence why no one stopped Zamasu in the other timeline? Mojito's still pretty active.

I certainly think Super could do will more backstory. But Dragon Ball has been historically underwhelming in the backstory and world building department within the original story. I think it's just more aggravating with Super because they introduce characters with such unique perks and/or gimmicks ...

That would get boring very fast, people were already starting to get very bored with the episodes before this arc and were getting bored with this arc before Freeza came back.
